Cilantro and Lime Salmon
With late August in Michigan comes the end of summer grilling season. We try to grill as long as we can and usually end up making it to at least mid-October, but some dishes are just made for summer.
We took advantage of the beautiful weather and grilled some salmon last night. I was looking for something a little different than just a marinade and then I came upon a recipe for Cilantro and Lime Salmon from Closet Cooking. I love pretty much anything with cilantro in it, so I was excited!
The recipe consists of oil, cilantro, lime, jalapeño and garlic. Throw it all in the food processor and you are done!! You can marinate your fish in the mixture, or you can brush it on top before grilling (which is what I did).
This dish was amazing!! By this time of year my hubby really has his grilling skills honed in, so the salmon was cooked perfectly. The cilantro and lime were robust and the jalapeño added just the teeniest amount of heat. The recipe calls for 1/2 of a jalapeño, but if you like heat, you could easily add more.
