Skinny Loaded Potato Soup (Slow Cooker)
Even though it’s not quite fall yet, we have been having some fall-like weather here in Michigan recently. So I am trying out some comfort food recipes that I don’t normally make in August!
I found a recipe on The Cookie Rookie blog for Slow Cooker Skinny Loaded Potato Soup. This combines two of my favorites…soup and slow cookers. I love cooking in a crock pot!! Especially in the fall, when my family tends to be super busy. This recipe is really quite easy to make, basically just chopping potatoes,carrots, garlic and onions and adding them to chicken broth. This cooks for just 3 hours and then you add the remaining ingredients of herbs, half and half and cheese. The herb mix of chives, tarragon, basil and dill really make this soup different from a lot of potato soups that I have tried. Also, the recipe calls for cheddar or gruyere cheese…so I used a mix of both.
You then top your soup with crispy bacon (I used center cut), sour cream and green onions. I did expect this soup to be a bit thicker, as most potato soups are, but it was a little on the thin side. But thats okay!! It still tastes amazing. And it’s SKINNY!
