Bacon and Swiss Quiche
I love breakfast foods. One of my favorite breakfast dishes is quiche. When I think quiche, I think of holiday mornings, as my mom makes a killer quiche for Easter and Christmas family breakfasts.
I found this recipe for Weight Watchers Bacon and Swiss Quiche on the weight watchers official website. Now I am not on Wight Watchers, but I do make a lot of healthy, low fat dishes. And this recipe is only 3 points, so I know it’s probably pretty low in calories (even though it’s not listed on the site).
I was shocked as to how yummy this quiche was. You would never know it was weight watchers! The recipe calls for a mix of eggs and egg substitute along with swiss cheese and turkey bacon (which I swapped for center cut bacon). Along with some spices, including nutmeg (!), it made for a great filling. AND…the crust is made from phyllo dough! The recipe suggest using three sheets, but I used just a little bit more.
If you are looking for a healthy meal for breakfast, brunch or dinner, give this recipe a try!!
