Cherry Vanilla Cupcakes
Ahhhhh, I’ve never met a cupcake I haven’t liked. The taste of a whole cake in just a little package…what’s not to love? Cupcakes are one of my favorite things to take to parties and gatherings. In fact, I had a family gathering to go to last night, so I decided to make a couple of cupcake recipes i’ve been wanting to try out from my Pinterest page.
I found this recipe for Cherry Vanilla Cupcakes on the Give Me Some Oven website. These cakes looked adorable and I was wanting to see if they tasted as good as they looked.
First off, the batter is made with egg whites and buttermilk, so the cake is a delightful texture. Not as light as I had thought, but fluffy. You use actual cherry juice to sweeten the cupcake, along with almond extract, so it is not overly sweet. Also, just to let you know, this recipe says it makes 24 cupcakes, but it really only makes about 20 if you fill each liner 3/4 full.
The frosting is a buttercream, which is nice and light. BUT, the recipe says you can use the cherry juice or milk as a liquid ingredient…and I would suggest using a bit of both. I used all cherry juice and my frosting was too sweet for my taste. When making this recipe next time I would use half cherry juice and half milk.
When finished, these cupcakes are the cutest little things!!
