Creamy Caprese Quinoa Bake
Has anybody else jumped on the quinoa bandwagon?? I sure have. I love cooking with quinoa. For those who don’t know, quinoa is a grain that is packed with protein and fiber.
It seems that most of the recipes I collect that have quinoa in them, they use it in place of pasta. This recipe for is no different! I originally found the recipe for Creamy Caprese Quinoa Bake on the Half Baked Harvest blog. She has TONS of great recipes on there!
This bake is pretty easy to make and doesn’t call for a ton of ingredients. First, you have to cook the quinoa. I cook quinoa by using 1 cup of quinoa and 2 cups of liquid (I use chicken stock to give it more flavor). Bring it to a boil and reduce heat for 10-15 minutes. By that time the liquid should be pretty much gone. Fluff it with a fork, as you would rice.
You make your own “homemade” sauce with this recipe. You do this by combining your favorite pasta sauce and tomato paste, then adding heavy cream (I subbed half and half) and parmesan cheese. It made for a pretty tasty sauce!!
After you mix together the sauce, quinoa, spices and some fresh basil, you top it with fresh mozzarella and toss it in the oven for 15 minutes.
I served this bake some garlic bread and it tasted just like a pasta dish! The sauce had a ton of taste and the melted mozzarella (along with some fresh basil) made the perfect topping. I even hit my protein goal on My Fitness Pal!
