Hot Chocolate Cupcakes
Yes, you read correctly…hot chocolate cupcakes!! This recipe from Tasty Kitchen got my curiosity peaked, so I had to give them a try. And I was not disappointed!
This recipe calls for coco powder, flour, baking soda, salt, sugar, eggs, vanilla and milk for the cake. I don’t know what it was about this combination, as it seems like the ingredients in most cupcake recipes, but these cakes rose the perfect amount. They were beautiful, tall dome-shaped cakes. The coco powder was JUST enough for a light chocolatey taste.
Now, for the frosting…it is a typical butter cream recipe. The recipe calls for more coco powder, to lightly flavor and color the frosting. BUT, I read in the comments of someone using actual hot chocolate mix as a sub. I did this and it made all the difference. It made the frosting frothy, like the top of hot chocolate! The texture was amazing! I did add a little bit of coco powder, mostly for color. And I ended up adding at least a tablespoon of hot chocolate mix. I just keep tasting until I felt the combo was right.
I don’t particularly care for chocolate cupcakes. Too often they are too rich for my taste. These are just about perfect. The chocolate in the cake is not overwhelming and the frosting has a light, marshmellowy taste with a chocolate oomph.
