Mashed Potatoes w/ Gouda and Bacon
I have really been in a side dish slump lately. I need some new ones to add to my oldies but goodies.
I found this recipe for Mashed Potatoes with Gouda and Bacon on A Hint of Honey. I love gouda (and bacon…and potatoes…), so you can see why this recipe was right up my alley. Gouda is a yellow cheese with a soft sharp taste that makes it appealing to most. I used smoked gouda for this recipe, as I wanted some additional mesquite taste to add to the bacon.
This recipe is a pretty easy to prep. After boiling the potatoes (don’t forget to salt!!), you add sour cream, butter and milk and commence to mashing. You then mix in chopped bacon, gouda and green onions. Top with remaining gouda and cook for 30 minutes.
The result is a creamy, smoky mashed potato upgrade!
