Stuck inside on a chilly summer rainy day got me thinking about fall baking. Dare I say, my all time favorite cake would be oatmeal cake?? I am a cake lover, and I do believe this is my favorite cake recipe.
I found this recipe on the Dinner Dishes and Desserts blog. My aunt Laura, who happens to be the best baker in the family, make a wonderfully delicious oatmeal cake. I don’t have her recipe written down, but this one comes close.
The cake recipe is pretty simple. It is more of a cinnamony oatmeal cake. You blend the usual cake ingredients then add oatmeal that has been soaked in hot milk.
Now, what really makes this cake is the pecan coconut streusel topping. You make this on the stovetop with coconut, chopped pecans, butter, milk and brown sugar. The recipe suggest you make this while the cake is cooking and apply it to a hot cake. I didn’t do it that way. I let the cake cool for a bit, then add the topping. This is not part of the recipe, but it is ESSENTIAL to make this cake the best oatmeal cake ever…after you add the streusel to the cake, put it under the broiler for a minute or two. This turns the topping into a beautiful sweet crust!!
Since we used old fashioned oats instead of quick oats, the cake has an impressive texture. You can actually taste the pieces of oatmeal! And the streusel crust is buttery and sweet at the same time. It compliments the cake perfectly. If you have never made an oatmeal cake, this recipe is for you!
