Pumpkin Pie Cake
So autumn has finally arrived! That gives me the perfect excuse to cook with pumpkin for the next three months and not feel bad about it. Pumpkin dishes seem to be a little hyped up during this time of the year, but it is seriously one of my favorite things to bake with.
I kicked off fall by baking a Pumpkin Pie Cake from Six Sisters Stuff website. I have had this pinned on my Desserts page for quite a while, but hadn’t made it yet. My cousins baby was having a 1st birthday party this weekend, so I thought this would be the perfect event to try it out on a crowd.
This cake was divine!! The “filling” was made almost just like a pumpkin pie. After mixing pumpkin, evaporated milk, sugar, eggs, salt, pumpkin pie spice together you pour it in a baking dish. Then you sprinkle yellow cake mix over the top. Spoon melted butter all over the cake mix. And the final step is to scatter pecans over the cake mix. Be very careful when putting the dish in the oven, as the pumpkin layer is very liquidy and sloshes around a bit.
The aroma from this dish while it is baking is better than any autumnal candle you can buy! After 55 minutes, the cake was baked perfectly. The top had formed a beautiful tender cake, while underneath was a moist, spiced pumpkin pie layer. The combination of the two was sheer pleasure.
The dish was a hit at the party! No leftovers, haha! This will be a repeat dish, for sure!
