Beef and Bean Taco Casserole
I heart Mexican food. If it was acceptable, I’d eat it 5 days a week. I am always on the lookout for Mexican inspired recipes and I found one one for Beef and Bean Taco Casserole on recipe.com!
If I had to rename this recipe I’d call it Nacho Casserole!! It take all the components of nachos and makes it much easier to eat.
First, you crush up tortilla chips and line the bottom of a baking dish. Then you take browned ground beef and mix it with refried beans, salsa and taco seasoning to make the middle layer. Now the “topping”; green pepper, tomatoes, shredded monterey jack and olives. Bake uncovered for 20-30 minutes then top with more tomatoes, shredded lettuce and crushed tortilla chips…and maybe just a little bit of avocado, like I did…OH and a dollop of sour cream, if you’d like.
This dish hit the spot last night!! It isn’t too heavy, like some Mexican dishes can be. The veggies made it really fresh tasting. I used fresh mild salsa instead of jarred, which makes the flavor so much more robust (and less salty).
