Crockpot BBQ Chicken Quinoa

YESSSSSS!  I have finally found a quinoa recipe that my hubby likes!  I make quinoa a couple times a month, in different applications, and he is never really gaga over any of it.  He just doesn’t understand quinoa and what its all about.  So imagine my surprise when I made Crockpot BBQ Chicken Quinoa (courtesy of the Whole Yum website), and he devoured it!  He ate three bowls full.

This recipe was super easy, as are most of the crockpot recipes that I make.  In the crockpot, mix together uncooked quinoa, frozen corn, diced red pepper, chopped garlic and onion, cumin, chili powder, paprika, chicken broth, liquid smoke and a hickory BBQ sauce. Then you nestle the chicken breast down into the mixture.

This only has to cook, on high, for 2-3 hours.  This recipe only calls for 1/2 pound of chicken, so if you are cooking more than that (which I did), make sure you adjust accordingly.  After cooking is completed, you top your dish with reduced fat shredded cheddar, cilantro and more BBQ sauce.

I did not have any liquid smoke, so I used a concoction of A1 and worcestershire sauce.  Also, I used a LOT of chili powder.  The recipe only calls for 1/2 tsp, and I probably used more than a tablespoon…but I like a kick.

The flavor is pretty amazing. Since I used so much chili powder, the dish really had a bite.  The spice was beautifully complimented by the sweet BBQ sauce (I used Famous Dave’s Sweet and Sassy).  The cumin added a nice smokey taste and the chicken was juicy.

If ever there was a manly quinoa dish, this is it!

    The quinoa didn’t get soggy at all? I’m going to try this!

      I was actually surprised the quinoa didn’t get soggy! It must have been just the right amount of liquid? I hope you like it!!
