Oatmeal Pumpkin Creme Pies
Over the next couple of months, you will notice that I really like cooking with pumpkin. It is the only time of the year I normally cook with it…so I really do it up!
Today I tried out Oatmeal Pumpkin Creme Pies from Sally’s Baking Addiction. Sound tasty?? They were!
The recipe starts off with a pretty basic oatmeal cookie recipe (butter, dark brown sugar, granulated sugar, egg, vanilla, baking soda, cinnamon, old fashioned oats, flour…and I added just a pinch of nutmeg). Make sure you do not over bake these cookies!!
The filling is amazing!! Blend cream cheese, butter, pumpkin puree, cinnamon and pumpkin pie spice together. Add confectioners sugar until you achieve desired consistency. The recipe recommends adding salt if you’d like to cut the sweetness a bit, and that is exactly what I did. I had to taste it quite a few times until I got it just right.
These are everything the name says! The oatmeal cookies are not over sweet, so it lends a nice base to the creme. And the creme…I could slather that on just about anything!! It’s velvety and has just the right amount of pumpkiny spice. Adding the cream cheese and the salt makes sure it’s not too sticky sweet. It really is a perfect marriage.
