Jalapeno Popper Pulled Chicken Sandwich
I thought this recipe was sooooo interesting. I mean, I really like jalapeño poppers. I like how they are spicy, but not TOO spicy. But most of all, I like the mix of the breading, jalapeño and the cheese. It just taste so good! But making this into a sandwich? I had to try it.

So what it looks like is that the author expanded on one of her existing chicken recipes. Super simple!! Put diced onion and garlic in the bottom of your crock pot. Place chicken in to. Then you will pour cans of Rotel over the chicken. The we spice it up! Sprinkle chili powder and cumin over the chicken (I used quite a bit of both of these). The chicken will need to cook for 4 hours on high or 8 on low. When done, drain most of the juice and re season if necessary (which I did).
Then you will need to make a panko “topping”. To do that you just need to melt butter in a sauce, add panko and cook until lightly toasted.
For the cheese sauce you will need to heat heavy cream until it almost boils. Whisk in cream cheese and cheddar and stir until smooth.
Now, for the assembly! Place the chicken on the bun and top with cheese sauce, panko and finally jalapeños!
It is crazy how much this taste like a popper! The chicken is nice and spicy, but the real heat comes from the jalapeños, so consider that when choosing how many to put on your sandwich! I love the buttery taste from the panko and it goes so well with the creamy cheese sauce. This recipe was a real hit with the hubby!
