“Mock” Garlic Mashed Potatoes
I am a side dish queen. When eating a big meal with lots of side dishes (like Thanksgiving), I mostly will pick the sides to eat! That being said, I almost alway have a side dish with the meals I make here at home. This recipe for “Mock” Garlic Mashed Potatoes by the Food Network is a dish I have probably made 50 times. Its easy and yummy…AND my kiddies like it!!!! By the way, its “mock” mashed potatoes because its really cauliflower.
The recipe calls for a medium head of cauliflower. Cut it up and boil it until well done. Drain and add to the food processor. Puree the cauliflower with cream cheese, parmesan, garlic, chicken bullion, and pepper until smooth. Garnish with chives.
The recipe also suggest that you try with roasted garlic or rosemary to mix it up a bit.
You are going to love this dish! The garlic makes the cauliflower sooooo savory. Adding just that little bit of cream cheese makes this dish nice and creamy. The chicken bullion adds a ton of flavor, along with the parm. Perfect combination!
