Skinny Chicken Salad
I am home a lot of days for lunch and often run out of good stuff to eat. I often find myself wondering around my kitchen thinking if I should eat canned soup…a turkey sandwich…Lean Cuisine…non of which ever sounds good. Sooooo, I found this pin from Skinny Mom for Chicken Salad and I’ve had it pinned FOREVER. I finally got a chance to make it this week:)
Super simple deluxe version of chicken salad. Start out with shredding some skinless, boneless chicken breast. They have a great recipe for boiled chicken on the website, but I did the easy thing and bought a rotisserie chicken. Then you whisk together greek yogurt, mayo, vinegar, honey and s+p. This will be our dressing. Add grapes, pecan and celrey to the shredded chicken. Add the dressing and toss to coat.
I was never one for a lot of “stuff” in my chicken salad until a friend of mine made a very similar recipe and got me to try it. The grapes add so much flavor to the chicken and it is totally complimentary in taste. The pecans and celery add a lot of crunchy goodness. The dressing is diet, but doesn’t taste it at all. The vinegar and mayo are tart, but it is evened out by the honey and the yogurt makes it extra creamy.
By the way, this chicken salad is only 223 calories per CUP! It packs 24 grams of protein and is 6 weight watchers points.
