Sausage Egg and Biscuit Casserole
It’s the weekend! I love making breakfast for my family on the weekends…okay, it’s really the only time I make a REAL breakfast for the fam, haha! I found a great recipe from My Recipes quite a while ago, and finally got a chance to make it last weekend. Sausage, egg and biscuit casserole!! Or as my niece said, breakfast sandwich casserole, because that exactly what it tastes like.
This recipe is great because it has pretty limited ingredients. You start out by lining your 8×8 baking dish with buttermilk biscuits. I cut each of my biscuits in about six pieces and just piled them into the bottom of the pan. Brown the sausage and spread the crumbles over the biscuit “crust”. Whisk 6 eggs, milk and S+P and pour that over your bread and sausage.
The recipe says to add the shredded mozzarella and cheddar on top at this point, but I would hold off on that step for a bit. This dish is recommended to cook for 25-30 minutes, but mine was not done and the cheese started to get real well done. I would cook for 15 minutes or so before adding the cheese, as you will need to cook the casserole for about 40 minutes before the middle is done.
This recipe didn’t get the best reviews, but with the couple of adjustments, I thought it was amazing! Like I said earlier, it taste super similar to a breakfast sandwich! The egg is super delicate, almost like what you would find in a quiche. The biscuits are pillowy and delicious. I love how the author mixed the mozzarella and cheddar cheeses, as it really kicks it up a notch in flavor.
We actually had this for dinner and had leftovers for breakfast!
