I am always up for an easy crockpot recipe. But I’m pretty sure this one takes the cake as the easiest one EVER.
I came across this recipe for Crock Pot 3-Ingredient Balsamic Chicken on the SkinnyMs site. True to its title, it only had 3 ingredients!! The recipe calls for you to place chicken breast in the crock pot and cover with salsa (I used a fresh salsa from the deli department) and balsamic vinegar. Prep is done! Six hours on low or 4 on high.
First of all, the smell of this concoction while cooking is amazing! Second, you would think with only three ingredients, the dish would be lacking in flavor and depth. WRONG. The fresh salsa makes a great base for the chicken, but it’s the balsamic that really amps up this simple dish. It adds a zip that elevates the two ingredients to gourmet level. Third…you have choices with this dish. We had some Kings Hawaiian rolls and flour tortillas and the chicken was awesome on both. The following day for lunch, I enjoyed just the chicken with some mashed potatoes. This is one of those dishes that is even more flavorful the next day!
Oh, and I will add that it is only 263 calories.
