Unstuffed Cabbage Rolls
Snow, snow, snow, snow…SNOW. We are now on our fourth day of being snowed in. Three days last week and one today. It’s been snowing for about 12 hours now. So, with snow comes a craving for comfort food. Luckily I was able to get out to the grocery earlier today to stock up!
On tonights menu was Unstuffed Cabbage Rolls from the Just A Pinch Website. There are SO many recipes for various cabbage rolls, but this is the first one I actually tried (other than my mothers amazing traditional stuffed cabbage rolls that have recently made it back into our Sunday dinner rotation after a lengthly sabbatical).
This recipe is MUCH easier to make than the traditional rolls. Simply sauté beef, onion and garlic. Add chopped cabbage, tomatoes (I always use fire roasted), tomato sauce, S+P. Bring to a boil then cover and simmer for 20-30 minutes.
The recipe calls for 8 oz of tomato sauce, but I opted to use more, as I wanted my dish to be a little more stew like. Also, make sure you tasting your food! This recipe requires salt and you want to make sure you get that seasoning spot on.
This is an ultimate comfort food. Its super savory from the cabbage yet robust from the tomatoes. The flavor profile is deep, even though the ingredients only need 30 minutes to meld together. This dish will make you FULL. And the best thing? You will have plenty for left overs…which seem to taste even better the next day!
