WW BLT Pasta Salad

I haven’t made a cold pasta recipe in months, as it is winter and I usually reserve the pasta salad recipes for summer.  But, spring will be here very soon, so I thought I’d practice up on some warm weather cooking.

I spied this recipe for Weight Watchers BLT Pasta salad on the 77 Recipe website (though it is published on a lot of other sites).  It made me crave summer!  Though the thought of getting into a bathing suit anytime soon makes me cringe, my thought was made a little bit better by knowing this recipe is only 86 calories per cup!

Start by cooking shell pasta.  Combine pasta, bacon, tomatoes and lettuce in a large bowl.  In a small bowl combine sugar, cider vinegar, sour cream, mustard and S+P.  Pour the sauce into the pasta mixture and stir well.

I ate this pasta while it was warm and it was fantastic!  Full of flavor that tasted just like a BLT sandwich.  What made this pasta salad even better was the addition of the cider vinegar.  It added a zip to the cream sauce that a lot of macaroni salads miss with just having mayo as the dressing.  The bit of dijon added another a whole other layer to the taste too!  The bites of bacon lent a great smokiness.  I wasn’t quite sure how I felt about putting lettuce in a pasta salad, but I ended up being okay with it.  I actually used shredded lettuce and concluded the dish would not be the same without it.
