Chocolate Chip Graham Cracker Cookies
I am a huge fan of chocolate chip cookies. It took me years to find my favorite chocolate chip cookie recipe (find that recipe here: http://diaryofafoodie.net/2015/08/the-perfect-chocolate-chip-cookie/), but I still like to try out new ones. I thought this recipe for Chocolate Chip Graham Cracker Cookies by My Baking Addiction might might just give my fav a run for the money, and it did!
Start out by creaming the butter and sugar together. Add egg and vanilla. In a separate bowl, combine graham cracker crumbs, flour, baking soda and salt (I always add a little bit more salt than is called for in my chocolate chip cookies, as I like that little bit of bite with the sweetness). Add the dry mixture to the wet until combined. Stir in the chocolate chips.
Now, after you get your cookies scooped onto the sheet, the author would like you to bake for only 7 minutes. I went just a couple minutes longer, as they were just a tad under baked for my liking. They will look under done when you take them out, but they are suppose to.
What you are left with is a super moist cookie that is nice and crunchy around the edges. Chocolate chip cookie perfection, if you ask me. These cookies have a honey sweetness to it, obviously from the graham crackers, that enhances the “everyday” chocolate chip cookie taste. The best part about this recipe (other than the taste, of course), is the fact that they stay soft!! Usually I have to put a piece of bread in with my cookies to keep them soft, but not with these babies! They stayed soft for three days!
