Chocolate S’mores Pudding Cake
We recently installed a fire pit in our back yard and I am now obsessed with cooking s’mores just about every night that we have a fire. I mean marshmallow, graham crackers and chocolate…come on!
While looking for a dish to take to a preschool “last day of school” potluck, I came across this recipe for Chocolate S’more Pudding Cake (from the Inside BruCrew Life website) and thought I could now have my obsession in portable form!
This dessert features a graham cracker crust (just graham cracker crumbs and butter mixed and pressed to the bottom of the pan) topped with a chocolate cake (just from the box). This is actually a poke cake, so when the cake is done baking, you “poke” the cake several times with the handle of a wooden spoon. Be sure not to go through the graham cracker crust! Those holes are then filled in with chocolate pudding and it is put in the fridge to chill. The final layer is a mix of cool whip and marshmallow topping, spread thick, and topped with chopped up hershey chocolate bars.
This cake is so moist and super chocolatey! The kids (and hubby) went super crazy for it. The graham crust cut the sweetness of the chocolatey layer perfectly. The fluffy topping was light and airy. This dessert is perfect for a summer time BBQ, for sure!
