I LOVE summer eating! In a lot of summer recipes, there seems to be a lightness to the food…in a good way. I like this recipe for a BLT Bowl from the Londoner website because it takes a comfort food and turns it into the ultimate summer salad! I am not a huge fan of salad for dinner, but this recipe has now become the exception.
This recipe takes some of my favorite flavors and puts them all in one bowl! First, the bacon…I always use center cut, but feel free to use turkey bacon to cut back on the fat. Cook it until its nice and crispy. Next, chop up lettuce (I used romaine), avocado, cherry tomatoes (I prefer grape tomatoes), cucumber and cilantro. Top with crumbled feta and your bacon.
The dressing is incredibly easy too! Whisk together olive oil, balsamic, mustard and lemon juice and season with salt. Drizzle over your salad.
Now you would think, with such simple ingredients, this salad might fall a little flat…um NO! Each bite was like a flavor explosion. By using romaine, the salad was super crunchy. The cilantro (which I never would have thought to use in this application) was a surprising burst of spiciness. This salad would NOT be the same without it. The avocado and feta provided a creaminess that was much appreciated. The dressing was a tangy taste that paired so well with the sweetness of the salad components. And the smokey bacon grounded it all!
This is a perfect recipe to make and take to a picnic or summer potluck! Just an FYI, it does not fare well overnight. Better to eat this one in one sitting:)
