Maple Oatmeal Muffins
I don’t make muffins often, as I really prefer cupcakes, haha! BUT, I saw this recipe for Maple Oatmeal Muffins on Bunny’s Warm Oven blog and decided I needed to try them out! Luckily I wasn’t disappointed. Just FYI…we will be making a Spiced Maple Butter to spread on these babies…WHAT!?!
This recipe uses old fashioned oats, so you start out by soaking a cup of them in milk. While you are waiting for the oatmeal, mix together flour, baking soda, cinnamon and salt in a medium size bowl. When 5 minutes has passed, mix REAL maple syrup, melted butter and a beaten egg in with the oats. Now this is a little different, you need to add the wet mix to the dry mix. Stir until just moistened and add in walnuts.
Now, the recipe didn’t specify how many muffins this mix makes. I made 18, but they were quite small. I think I would have only made 12 if I would have filled them 3/4 full. Cook for 15-18 minutes (mine took 18) and serve warm.
But lets not forget the Spiced Maple Butter!! Simply beat room temp butter, cinnamon and maple syrup together and spread on your warm muffin.
This muffin is so hearty. The oats are nice and soft. There is just a hint of sweetness from the maple syrup (please use the real thing) and the cinnamon is totally in the background, as you only use 1/4 tsp. The walnuts lend a crunch that is just delightful. And the Spiced Maple Butter…OMG! You can bet we will be having these for breakfast (and maybe dessert) all week long!
