Bacon and Caramelized Onion Potato Salad
Always, always searching for good, easy side dishes lead me to this beauty from Creative-Culinary.com. Bacon and Caramelized Onion Potato Salad was as good as it sounds folks!
This recipe starts off with cleaning and cubing red potatoes. Boil in SALTED water until tender, but still a bit firm. Drain and cool slightly. While potatoes are cooking, saute bacon, reserving 2 tablespoons of drippings. Remove bacon and add onions to the pan. Cook for about 10 minutes or until soft. Add brown sugar and cook an additional 5 minutes. Combine potatoes, bacon and onions. Wish mayo, sour cream, mustard and lemon juice together in separate bowl. Add to the potato mixture and toss. Add salt and pepper and top with remaining bacon.
WOW. This was, by far, the best potato salad I have ever made! The onions absolutely made this dish spectacular. Sautéing them with the bacon drippings and brown sugar made them smoky with a hint of sweetness. The bacon added a crunch. And the dressing completely complimented the salad, adding a cool creamy element to the dish. I thought it actually resembled a German potato salad in taste, only a bit less sour and a lot more refined.
The author suggest to chill the salad before serving, but I served it warm and it was amazing! It is also very good chilled for up to three days after making.
