With Christmas comes eggnog! My four year old loves this seasonal drink, while my 10 year old doesn’t really care for it. Put it in cookie form…and everybody loves it!
I have made about 6 different cookies, so far, for the 12 Days of Christmas Cookies and this one is my FAV so far. I hope you enjoy it!
Cream together soften butter and sugar. Add eggnog and egg. Add flour, baking soda, baking powder, salt and nutmeg and chill for at least one hour. Bake for 8-10 minutes. After baking, slightly flatten cookies with the bottom of a glass and let them cool. In the meantime, mix together powdered sugar, eggnog and karo syrup to make a glaze. Frost cookies and top with a sprinkle of nutmeg.
These cookies scream Christmas. I couldn’t believe how just a cup of eggnog flavored this batter! The cookie is perfectly seasoned and is beyond moist. The frosting is more of a glaze with a welcomed sweetness from the sugar and warmth from the nutmeg.
By the way, I have never added Karo syrup to a glaze before. The recipe stated it was to harden the frosting a bit when drying. This is an amazing tip that I will use a lot!! The glaze set up perfectly and even had a bit of a sheen to it! I was able to stack my cookies without getting frosting everywhere too.
