Pistachio Pudding Cookies
I am absolutely crazy about most baked goods containing pistachios. I was super excited to find a recipe for Pistachio Pudding Cookies on the Cookies & Cup blog just recently, so I thought it would make a great addition to my 12 Days of Christmas Cookies. Boy, was I right!
This recipe starts off with creaming sugar and butter together in your mixer. Add in your eggs and pistachio pudding (any cookie recipe that includes pudding as an ingredient is probably going to be pretty fab…and this one is no exception). Add your dry ingredients of flour, baking soda and salt. Stir in chopped pistachios and white chocolate chips. Bake for 9-10 minutes and done!
What I absolutely loved about these cookies were how moist they were, even days after making them! The flavor profile is awesome, especially since there are only 9 ingredients. The dough was not overly sweet, as one might think with adding the pistachio pudding. And let me tell you, the crunch and saltiness from the chopped pistachios was a perfect accompaniment to the sweetness from the white chocolate chips. LOVE!
