Ground Turkey Sweet Potato Skillet
Still rolling along on the Diet Train…whoot, whoot. Next stop is Ground Turkey Sweet Potato Skillet from the Musely website. I have made a couple of sweet potato “hash” dishes in the past, and this one was really tasty!
One thing I have to say is I totally hate cutting sweet potatoes. I am terrified I will take my finger off every time! But dicing the potatoes up was the worst part of this totally easy recipe prep.
Start off by browning the turkey and garlic in a bit of olive oil. I used extra lean turkey in celebration of eating healthy, haha! Add onions and yellow pepper and sauté until the onions are golden. The recipe then calls for you to add the diced sweet potatoes to the skillet and cover until tender. However, I boiled the sweet potatoes for about 7 minutes before I added them to the pan because I wanted to make sure they would be totally cooked through. When dish is completely cooked, add shredded mozzarella to the pan and cook in a 400 degree oven until cheese is melted.
I thought this dish was going to be pretty simple tasting because it is difficult to find diet food that is not one dimensional. Happy to report, I was wrong. This is one rich tasting recipe! The turkey, with the onions and garlic was a hearty backbone to the hash. I liked the freshness (and color) that the yellow peppers brought. The potatoes were cooked perfectly and added a shepherds pie feeling to the dish. What probably pushed it over the edge for me was the cheese topping. I will admit, I didn’t use the mozzarella. I thought I have some in my cheese drawer, but it was 5 blend italian cheese that I ended up with. Since the rest of the ingredients were so lean, I splurged on the cheese and it was SO worth it!!
