Skinny Orange Muffins
Put “skinny” in front of just about any sweet treat and I’ll eat it! Haha!! When I’m dieting, I seem to long for baked good much more than when I’m not. I snatch up pretty much any recipe that figures out a way to let me enjoy sweets without the fat and calories. I jumped at the chance to try out Mom on Time Out’s recipe for Skinny Orange Muffins and this is how it went.
Combine your flour (any kind you’d like), sugar, baking powder and salt in a bowl and set aside. Whisk together coconut oil, greek yogurt, milk, egg and orange zest in a bowl. Stir in dry mix until just moistened. Pour batter into muffin tin (I did NOT use papers) and bake for 16-20 minutes. In the mean time, you can make the glaze, which is made with powdered sugar, orange juice and orange zest. Feel free to tweak the recipe to achieve the consistency that you like to frost with. When the muffins are cool enough for you to handle, dip the top into the glaze and place on a bakers rack until the icing is set.
Then its time for a taste test! The orange flavor is SO fresh, as we only used orange zest when preparing. It is there and in your face. The body of the muffin is a perfect doughy biscuity type texture and I liked that it wasn’t overly sweet tasting. Now, the orange zest was enough for me and my husband (who thought these muffins were amazing), but if you’d like to add a little more orange flavor you could easily add a splash of OJ to the batter to maximize the taste.
These muffins are best served warm, but they will store for a couple of days.
