Chipotle Portobello Oven Fajitas
One of my dear friends has transitioned to a plant based diet, so I’ve been on the lookout for good recipes for her to try. I’m totally hoping some of her awareness will rub off on me! This is what lead me to try out Chipotle Portobello Oven Fajitas from the Budget Bites site.
This recipe is basically just cutting up onions, peppers (your choice of color), and of course portobellos…tossing them in olive oil and roasting them at 400 degrees. Now what distinguishes this recipe from many others is the homemade taco seasoning you sprinkle over the veggies, after coating them in oil. A mix of chipotle powder, chili powder, onion powder, garlic powder, cumin, sugar and salt makes for a kick ass addition to what could have been a very ho-hum dish.
I assembled my fajita by piling on the roasted veggies and my cousins Sarah’s Guacamole on a low carb tortilla. That’s all it needed! The filling is so flavorful, thanks to the home made seasoning. Between the smoky and spicy seasoning and the “meaty” portobello…you NOT miss the meat at all. My husband is a huge meat lover, and he ate three of these babies. I guess that makes them MAN APPROVED!
