Instant Pot Bacon Cheeseburger Goulash
I have really been trying to make recipes that our whole family can enjoy…even the picky 5 year old. This is kind of hard to do, when everyone else in the fam is pretty adventurous with food. I mean, my 11 year old loves calamari!
One thing my 5 year old will eat is goulash. She loves it and the rest of us do too…but it can be a little boring.
From Val’s Kitchen had a Cheeseburger Goulash for the Instant Pot that sounded pretty amazing. It contains tomatoes, which my kids were not that happy about…but I was, haha. Guess what?? They ate it all, including the tomatoes!
I know you guys know I am crazy about my Instant Pot and this recipe is one of the reasons why. it only has 6 ingredients (ground beef, pasta, beef broth, diced tomatoes, velveeta and bacon), yet the flavor is SO deep. OH! And the cook time is only 5 minutes!
The recipe starts off with searing the ground beef on the sauté setting on your Instant Pot. After that is complete, you add the beef broth, pasta and diced tomatoes (with garlic, basil and oregano). Now, in the original recipe, it says to add water at this step…but there is no water listed on the ingredient list. I did add 1/2 cup of water, but you do NOT need to add it. It made the goulash too soupy, so just totally ignore the water issue. Seal up your pot and set for high pressure for 5 minutes.
Once cooking is complete and your pressure is released, add Velveeta and mix until melted. Then add the bacon and mix until incorporated.
Yum, yum, yum. The pasta was cooked so freaking perfectly, I really couldn’t believe it! The flavor profile was pretty deep with the cheese, tomatoes and bacon…it pretty much tasted like a cheeseburger with all the fixings, which makes this dish great for kids AND adults!
