Instant Pot Ribs
Let’s talk ribs. More specifically, ribs cooked in the Instant Pot. More times than not, we would cook our ribs on the grill or smoker…but living in Michigan, cold winters make it hard to do that. SOOOOO, when I got my Instant Pot for Christmas, I totally wanted to try a rib recipe. What I came up with is mixture of a couple of recipes.
1/4 cup Brown Sugar
2 T Chili Powder
1/4 tsp Cayenne (more if you like it spicy)
2 cups Root Beer
1 cup Cola ( I used Coke)
1 Bottle BBQ Sauce
2 Racks of Ribs
Remove membrane from bone side of ribs.
Place the rack that came with your Instant pot on the bottom of the pot.
Pour root beer and cola in the bottom of pot.
Cut ribs up (we cut them after every 4th bone, or so).
Mix together brown sugar, chili powder and cayenne to make the rub. Rub it all over the ribs.
Place ribs on rack in pot (we just stacked them on top of each other).
Seal your Instant pot up and cook on high pressure for at least 22-25 minutes.
While ribs are cooking, preheat your broiler.
Release pressure and placed cooked ribs on baking sheet. Smother them with BBQ sauce and put under broiler for 5 minutes.
My hubby was shocked as to how good these ribs turned out. I think he was feeling a little insecure about his meat cooking skills! The ribs were everything ribs should be…juicy, sweet, spicy, meaty. Writing this is actually making my mouth water, haha! I could not believe you could actually taste the cola and especially the root beer cooked into the meat. We served the ribs with baked potatoes cooked in the air fryer…it was a perfect “summer” meal on a winter night!
