Mediterranean Salmon Foil Packets
I love Mediterranean food. Unfortunately, most of the stuff I like is calorie heavy…like pastitsio (similar to a lasagna smothered in béchamel, oh jeez, now I’m hungry). I jumped when I found this recipe for Mediterranean salmon foil packets on the Sweet and Savory website. I enjoy cooking in foil packets during the summer on the grill, and since we had some warm spring days last week, I thought I’d try this one out!
My hubby got some beautiful salmon filets at the seafood shop and I laid those on a piece of aluminum foil. I doubled the foil up, just as a reinforcement. I drizzled each with a bit of olive oil and added the minced garlic, s+p and oregano and massaged it into the filet. Distribute the capers, grape tomatoes (I cut these in half), olives (make sure you use kalamata), crushed garlic, lemon juice, butter, parsley and fresh oregano to all the packets. Drizzle with a bit more olive oil and close the packets up.
We grilled these for about 15 minutes or so, and the salmon was done absolutely perfectly. The olive oil keeps it moist, while the garlic lends a punch of flavor. The lemon juice helps to make all the individual flavors pop. And I will be honest, I did not use the capers, as they are not my fav. They would have added a bit of a salty burst, but I just made sure my salmon was properly seasoned and I didn’t miss them at all.
