Summer is a upon us, so my dishes are lightening up a bit. Not cooking in the Instant Pot so much anymore, and cutting back of the heavy comfort foods of winter. BUT, I still like cooking pasta…so I jumped at the chance to make Creamy Garlic Shrimp with Pasta. This is also a weight watchers recipe, so yay!
The super light sauce is made by heating a bit of olive oil and sautéing onions and garlic for 3-4 minutes. Add white wine and simmer until alcohol evaporates. Stir in reserved pasta water, shrimp and half and half and cook until shrimp is done. Do not cook too long, as your shrimp will turn stringy if cover cooked…yuck! Depending on how many shrimp you are cooking, it really only takes a few minutes for them to be done properly. They will turn from a greyish to a pinkish when cooking is complete.
Add spaghetti (I used angel hair) to the shrimp mixture and sprinkle with parmesan cheese.
So, not only does this recipe take under 30 minutes to make…it is freaking delish. The sauce is so light, that it feels like you are eating pasta with a beautifully infused olive oil. The half and half adds just the lightest bit of creaminess to the dish. I saved a serving for lunch the next day and it tasted just as good as the previous night!
